Recipes are coming!

In 2024, one of my goals is to create and post recipes for many of the meals I make, recipes inspired by conversations with patients, and other quick & easy ideas.


Here's the first one, perfect for a snow day!


Equipment needed:

Slow cooker with function to saute OR large pot


Green Chile Chili

Ingredients:

1 tsp olive oil

1 lb ground turkey or chicken

1 can low sodium cannelloni beans, drained and rinsed

1 jar salsa verde (I used FODY Foods brand)

1 can diced green chiles (choose mild or hot based on your taste preference)


Cooking Instructions:

  1. Add 1 tsp olive oil to cooker or pot. Saute the ground chicken or turkey on medium/medium high until lightly browned, about 7 minutes, stirring as needed.

  2. Add can of drained beans, jar of salsa, and can of green chilis. Mix to incorporate.

  3. Lower heat to medium low and cook for 10-15 minutes longer

  4. Serve immediately or save for later in the week.

  5. Will keep in fridge for 4 days. Will keep in freezer for 3-4 months (I suggest freezing in individual portions)


Topping suggestions:

Greek yogurt, sour cream (Green Valley for Lactose Free), cheese, avocado, cilantro, diced scallions,
